After mastering Moroccan food at a young age Hamza Bensaid entered one of the top culinary arts and management schools: The Institut Paul Bocuse in Lyon in 2005.He then departed for his first internship to learn basics of French gastronomy at Vichys Chateau de Maulmont, awarded one Michelin star, before working at Biarritz’s famous palace ‘Hotel du Palais’, a two Michelin star restaurant, and finally concluded with L’Oasis, one of the best restaurants of southern France.Hamza then parted back to his mother-country, Morocco, where he was hired by Chef Mohcine Bensaïd as a chef instructor in the Gastronomic School of Salé, where he was born, yet only to move again to Los Angeles, where his brother was residing.In LA, Hamza worked at the well-known “La Cachette”, a french restaurant in Santa Monica, then at Frenchy’s Bistro and Number Nine (a Vietnamese restaurant), both located in Long Beach.In 2011, along with his brothers, he decided to open the gourmet food truck Morock’n'Roll! |
