For those who are more ecologically minded, here is a mobile vendor that covers a lot of 'green' bases.
The "Weird Fish" Taco Bike in San Francisco serves fish, shrimp, and seitan tacos from a tricycle that features a skillet, hand washing station, and even a slot for hands-free money collection (so they only accept exact change).
Not only that, they serve locally grown veggies and fish that is primarily farmed and sustainable.
