Phydough never uses processed sugar, although a couple of the recipes contain agave syrup. Most of the recipes also have add-ins that are human grade ... and organic when possible, Some of the flours used to make the cookies: King Arthur Organic, Spelt and Anson Mills, among others. Anson Mills Flour is on a plain above organic. The bacon comes straight from Tennessee and Allen Benton of Benton's Smokey Mountain Country Hams. Benton is the go-to guy for pork products that su~ply top-flight restaurants like Chef David Chang's Momofuku empire in New York City. Many of the ingredients are purchased (just as your own groceries) from quality grocers like Whole Foods and local farmers markets.
